Brakes & Briskets is a restaurant dedicated to premium, craft American smoked BBQ.
But we’re more than just great food - we create events and experiences. From curated car shows and Formula 1 watch parties to charitable fundraisers, camping trips, and pre-fixe dinner nights, we’re all about bringing people together.
Brakes & Briskets is a two-person operation. Every detail - from the BBQ to the branding, event planning, renovations, social media, and website - is handled by us.
We started this because we wanted to give back to the community by building the kind of inclusive spaces we wish we had growing up. And of course, to serve seriously good BBQ.

Contrary to popular belief, we’re a food business first and foremost.
We began as private caterers, long before carving out a niche at pop-up automotive events. Now we’re stepping into a bold new chapter as full-fledged restauranteurs. It’s exciting (and a little nerve-wracking), but we’re ready.
Thanks to our loyal following of car enthusiasts, there’s always great eye candy to go with our smoky offerings. That said, you don’t need to own a showstopper to enjoy our food. Everyone is welcome at our restaurant and events - no matter what you drive (or don’t).

2025–2026 are construction years for us.
We’re actively renovating our building and property, so we appreciate your patience during this exciting (and dusty) time.That said, we hear your calls for brisket!
We’ll be open for limited hours each week, depending on availability.Current hours and menu will be posted on our homepage and social media.
You can also keep an eye on the billboard and sign outside the restaurant for updates.
For now, we are open only on Sundays from 11 AM to 3 PM to start. We’ll expand our hours as progress continues.

We anticipate being fully operational by next year, Summer 2026. In the meantime, we hope you’ll continue to visit and support us during our limited hours as we actively renovate our building and property.

Yes, both dine-in and takeout are available with 150+ seats indoors and outdoors.

You may have noticed our restaurant has a bar! We currently do not serve alcohol nor permit BYOB.
Our focus is to create unique dining experiences in our bar area, e.g., Pitmaster’s Table. Stay tuned for upcoming private dinner dates.

On-Site Parking
We have ample parking space on our property on a first-come, first-serve basis. Please obey the entrance/exit signs and respect the cars on the lot.Do not park on the grass unless you have been instructed.
Overflow Parking
In the event that our lot is full, we have the following additional options:Far Knoll Lane. You must leave ample room for through traffic for residents, emergency vehicles, etc.
Central Ave. This street is located on the right after going down Far Knoll Lane. Please follow normal rules of traffic and do not block driveways or intersections.
409 US-22 (lot directly across from us). For safety reasons, this lot is only permitted with cops present who will escort you across the street. We will not be held liable if you park here under any other circumstances.
DO NOT PARK
Unfortunately, both of our next door neighbors have prohibited parking on their property. DO NOT park in their lots during our service hours as we are not responsible for their actions. -
We’re lucky to have built a strong following among both car enthusiasts and food lovers. And while we can handle up to 100 orders per hour (!), there’s only so much brisket to go around when hundreds of BBQ fans show up hungry.
To get the best experience (and the full menu), we recommend arriving early or during the first half of our service hours to beat the lines.

Great BBQ takes time - and that’s exactly why it sells out quickly. Unlike fast food, true BBQ is smoked low and slow for hours to bring out deep, rich flavors and tender textures. We prepare everything fresh and in limited quantities to maintain quality, because BBQ that sits around too long just isn’t good (it dries out and loses the flavor and texture that make it special).
Once it's gone, it’s gone, so we always recommend arriving early to get the full experience!

We’d love to make more, but quality BBQ can’t be rushed.Scaling up too quickly risks sacrificing the flavor and tenderness that make our BBQ special, and making too much also leads to unnecessary food waste.

We have just opened our first brick and mortar location at 454 Route 22 West, Whitehouse Station, NJ 08889! We will have limited hours of business as we continue to build, renovate, and settle into our location.

4. Book us as a vendor for your event
NOTE: For the remainder of 2025, we will no longer be doing pop-up events. However, we will continue to host our own Meat Meet events at different grasslands within NJ.
We are not a food truck. Different from a food truck, all of our food is prepared and smoked before the event (i.e., we arrive with BBQ that is hot, cooked, and ready to serve). Once we start trimming meats, there's no stopping! As such, we require an estimated headcount (better if confirmed) so we can gauge how much BBQ to prepare to ensure freshness and avoid food waste.
Please note that vendor events are subject to a non-refundable $500 booking fee to reserve your date (this is not a deposit). These practices help us avoid having to implement a "guaranteed minimum" that other food vendors typically have.

For our catering services, you pay for the food and service on behalf of your guests (i.e., your guests eat for free).
As a vendor, your guests pay us directly when they purchase their meals. On average, guests will spend between $20-35.
We are not a food truck and do not cook anything on-site. Services are available by demand and limited quantities. Our BBQ is prepared and smoked before the event, i.e., the food is hot, cooked, and ready to serve upon arrival.
To ensure optimal freshness and quality, a finite amount of BBQ is brought and available until sold out. For vendor events, headcount does not typically equal eaters, therefore we assess food proportions based on available information and expertise.
Please note that vendor events are subject to a non-refundable $500 booking fee to reserve your date (this is not a deposit). This helps us avoid having to implement a "guaranteed minimum" that other food vendors typically have.

Our brisket is a popular gluten-free choice, as it is salt & pepper seasoned without sauce.
Our other meats and sides are generally prepared with our custom rubs and BBQ sauce, which are not all confirmed to be gluten-free. However, if you have specific requests for personal catering, we can prepare your selections based on your dietary needs.
We offer halal meats for catering upon request.

Delivery
Yes, we deliver! Delivery is provided for $15 up to 10 miles from our central location ($1.50/mile additional thereafter). Additional toll fees may apply.For other catering or event inquiries, please see the Book Us page for more information.
We do not currently participate with other delivery services (e.g., DoorDash, Grubhub, Uber Eats).
Shipping
Shipping is not currently available; however, it is on the horizon for select items. -
Selling out is a good thing! We’re proud (and mildly concerned) that no matter how much food we prepare for pop-ups, it always sells out within 2-3 hours. It’s by design and that means people love our food!
Since we are not a food truck and do not cook on-site, everything is prepared and smoked beforehand. There’s limitations to how much food we can make and, more importantly, how much we can bring as a pop-up. Our unique operation allows us to process customers at unprecedented speed and volume (up to 100 per hour!). These are unimaginable numbers for traditional food trucks given the facility constraints and necessity to cook on-site. Therefore, if we’ve sold out… you were probably order #301.
When it comes to BBQ, it’s not always a good sign when there’s still food left after many hours…. A finite amount is smoked and we do not sell “leftovers” so every pitmaster aims to sell out of BBQ!
However, you can expect even MORE BBQ when our restaurant opens in Whitehouse Station, NJ on June 22, 2025. But truth be told, we’ll still hope to sell out of food :)

We try our best to feed everyone, but we can’t always get what we want. That being said, we encourage all guests to arrive during the first half of all events to ensure a full menu. Some guests arrive early and mingle over the menu (and cars).
To quote a happy repeat customer: “Pop-ups don’t bring unlimited food, which is why I was there 30 minutes before the event started! I love their brisket that much. Show up early and there won’t be a problem or you run the risk of waiting behind hundreds of people who also love their food.”

Meat Meet is a Cars & BBQ showcase created and hosted by Brakes & Briskets - the ultimate mashup of cars, smoked BBQ, live music, craft drinks, and epic giveaways. A carefully curated selection of vehicles are featured across the grasslands of New Jersey. We typically prepare 1,000+ pounds of smoky meats and extras, ensuring both meat lovers and vegetarians are satisfied. You won’t find this much smoked BBQ at any other NJ automotive show!
Our objective? To create cars & BBQ events that foster an engaging environment of inclusiveness and camaraderie much like a family BBQ. Bring your family, children, pets, and even non-enthusiast friends. We promise they’ll have a great time!

Pitmaster's Table is a "Pit to Plate" premium dining experience brought to you by Brakes & Briskets.
This intimate dining experience features a pre-fixe menu of tender, smoked dishes you won’t find at your typical BBQ establishment. Dinner lasts at least 75 minutes and includes a minimum of 5 courses paired with drinks. Past offerings have included smoked delicacies like wagyu brisket and oxtail.

This is never a question because our BBQ doesn’t last till the end of the party.
But if you are not up to the task, the brisket may be stored in the fridge for up to 10 days or frozen for up to 3 months.
Once reheated, meat should not be consumed if it has been left at room temperature for more than 4 hours.

TO SERVE
Brisket - Oven Reheating Method:
Step 1: Place on a sheet tray or large baking dish.
Step 2: For whole brisket, do not slice the brisket until reheating is complete.
Step 3: *Optional* Place a few pads of butter on top of the brisket.
Step 4: Place the brisket on the middle rack of the oven.
Step 5: Reheat for about 75 minutes at 225°F or until desired internal temp is reached.

*Per USDA: Foods should be reheated thoroughly to an internal temperature of 165°F.

TO SERVE
Ribs - Oven Reheating Method:
Step 1: Place on a sheet tray or large baking dish.
Step 2: Place a few pads of butter or additional sauce on top of the ribs. Optional
Step 3: Cover ribs with sheet of foil to keep moist during reheating.
Step 4: Place the ribs on the middle rack of the oven.
Step 5: Reheat for about 35-45 minutes at 250°F or until desired internal temp is reached.
